Beef and Dumplings – Serves 4
- Place a splash of oil into a pan, add the onion, garlic and carrots.
- Cook for 2-3 minutes. Add the beef and seal until golden brown.
- Add herbs and stock, cover with foil and place into the oven – gas mark 4 or 180C for 2-3 hours.
- After 2 hours place the dumplings on top and finish in the oven.
Dumplings:
- Mix together the dumpling ingredients and roll into small balls.
- Leave to one side.
Ingredients
- 2kg Diced Beef Chump
- 2 Carrots Peeled & Diced
- 1 Onion Finely Chopped
- 1 Clove of Garlic, Finely Chopped
- 2 Litres Beef Stock
- 2 Sprigs Thyme
- 2 Sprigs Rosemary
- Splash Olive Oil
- 4oz Self Raising Flour
- 2oz Suet
- 5 Tablespoons Water
- Salt & Pepper
