Mushroom Soup – Serves 4

  1. Place a deep pan onto a gentle heat, add butter and melt.
  2. Add the onion, leek and garlic, cook for 3-4 minutes.
  3. Add the mushrooms and sweat with a lid on for 2-3 minutes until soft.
  4. Add the stock and bring to the boil for 8-10 minutes, place into a blender and blend with double cream.
  5. Season and return to a gentle heat.
